EDUCATION Michelle received her undergraduate degree from The University of New Hampshire in Durham, NH where she studied French and Plant Science. Having the opportunity to study and live in France, along with her French ancestry, fueled her attraction to good food and the Mediterranean style of cooking. Creating meals from simple, wholesome and fresh ingredients is the basis for her counseling and her cooking classes. However, for Michelle, the road to health began when she was pregnant with her first child because eating a healthy diet and living a healthy lifestyle took on a whole new meaning. That began her conscious journey into whole foods as therapy. The study of Plant Science led her on a journey from gardening to the study of culinary and medicinal herbs. After 15 years of working on her own and using herbs to treat her family, she pursued a Certificate in Herbal Studies in 2003 from Mt. Nittany Institute in State College, PA. She continues to apply her knowledge of herbs in her cooking, and in healing the body, mind, and spirit. From there Michelle went on to receive her certification as a Holistic Health Counselor from The Institute of Integrative Nutrition in New York City in 2004. She is Accredited by the Association of Drugless Practitioners. She has pursued numerous courses in the Culinary Arts from The Natural Gourmet Institute for Health and Culinary Arts also in New York City, completing a Master Chef Series conducted by Chef Peter Berley. She now studies under Annemarie Colbin in Food Therapy for healing with whole foods. LIFE EXPERIENCE
Having raised three children and learning the hard way how to balance a hectic schedule of activities, running committees, coaching, teaching and running a household, Michelle has years of experience learning how to keep the balance. Proper nutrition and a nurturing spirit were of utmost importance and helped her to develop the balance so necessary to maintain the connection between body, mind, and spirit. As a Health Counselor, it is very important for her to hear what clients have to say on a deeper level. Knowing that many people are looking for care which encompasses their medical background, as well as the whole-person perspective, Michelle works in conjunction with medical practitioners to identify the needs of clients while using their expertise to assist each and every person to a higher quality of life. She works with individuals to review their diet and help them adapt to a whole foods diet that is right for them. She also works with chronic diseases to apply healing diets which work to help people recover balance and health. Currently Michelle lives and works from her home in Hummelstown, PA. Along with her husband, she maintains 16 acres of beautiful farmland where they plan to add to their apple orchard, and plant lavender fields and herbal crops. She has cultivated (with lots of help from her French mother) a very large organic garden used to supply her cooking classes and for donations to the community. She is currently working on a book to help Moms get back in the kitchen and cook for the health of their children. “It is my goal to practice a healthy lifestyle through good nutrition, exercise, a healthy environment, and continued spiritual growth. I strive to help clients with their health concerns by addressing what works for them and providing solutions that fit their individual needs. We are all unique in our skin. Life is a journey and we need to have heart in our path.” |
